For this recipe, the Dalia eggplant’s variety is used, strictly cultivated in the field with an integrated system. A real delicacy for those who love the internationally recognised “made in Puglia”.

Before tasting them you will be captured by the white of the eggplant slices, carefully selected for the quality and with a few seeds.
According to tradition, they are processed only with salt and vinegar and then be preserved with Evo. A few mint leaves and the inevitable pinch of garlic give an extra touch to this traditional speciality.
