Seeing them slowly dried to the heat of the sun is a unique experience to watch. After this phase, they are selected one by one by hand, boiled in vinegar and finally stored in extra virgin olive oil. A unique touch is given by the addition of some capers.
For the tasting:
Exceptional in a simple appetiser or as a side dish. If in the middle of an aperitif they become special on freshly baked Apulian bread. Even sublime to fill pizzas or combined in sauces.
